What Is Citric Acid in Food?

Citric acid is a weak organic acid found naturally in citrus fruits like lemons, limes, and oranges. It’s what gives these fruits their tangy, sour flavor. However, the citric acid you see listed as an ingredient in processed foods is typically not derived from citrus fruits. Instead, it’s industrially produced through a fermentation process, where microorganisms help convert sugars into citric acid.


How Is Citric Acid Made?

The industrial production of citric acid primarily involves the use of a mold called Aspergillus niger. Here’s the process:

  1. Fermentation: Sugars (often derived from corn or sugar beets) are fed to the mold Aspergillus niger. This mold metabolizes the sugar and secretes citric acid as a byproduct.

  2. Extraction: The citric acid is then extracted, filtered, and purified to create a crystalline powder.

  3. Commercial Use: The end product is food-grade citric acid, which is widely used in various industries.

While it may seem surprising that mold is involved in the production, the final citric acid product is thoroughly purified, rendering it safe for consumption.


Why Is Citric Acid in Our Food?

Citric acid is incredibly versatile and serves many purposes in the food industry, such as:

  • Flavor Enhancement: Its tangy taste boosts the flavor of foods and beverages.

  • Processed Foods (Listed as All Natural on those labels )

    In addition to natural sources, Lab made citric acid is commonly added to various processed foods, including:

    • Sodas and Soft Drinks: Many carbonated beverages contain added citric acid for flavor enhancement.

    • Candies: Sour candies often use citric acid to provide a tangy taste.

    • Frozen Foods: Citric acid is used as a preservative in some frozen products.

    • Powdered Beverages: Many powdered drink mixes include citric acid to enhance flavor and acidity.


Citric Acid from an Ayurvedic Perspective

From an Ayurvedic health standpoint, sour-tasting foods (which contain citric acid naturally) are considered to stimulate digestion and enhance appetite. However, Ayurveda emphasizes balance and encourages moderation. Excessive sour tastes may aggravate the Pitta dosha, leading to heat-related imbalances in the body, such as acidity or inflammation.
